In Turkish cuisine smoked eggplant puree is an easy and delicious recipe served especially with meat or chicken. Smoked eggplant puree is called “Beğendi” in Turkish. You can prefer smoked eggplant puree recipe if you’re vegetarian as well. Smoked eggplant puree may also be served with Turkish meatballs and believe me it’s really amazing.
Turkish style smoked eggplant puree
2 medium eggplants
1 lemon juice
2 crushed garlic cloves
A glass of thick yogurt ( 200 ml)

You can use two different methods to smoke eggplant. We can either put eggplants on stove or bake them in the oven. 25 minutes will be enough. You should bake/grill eggplant with their skins and then peel them off.
Peel the eggplants once they’re ready. Scoop out the flesh with the help of a spoon and cut in small pieces. Put the eggplants in a large bowl and mash them with a fork preferably. Crush lemon juice and garlic together. Add it to eggplants.
As the eggplants are hot add a spoon or yogurt and mix it well.
Then add the rest of the yogurt as you mix as fast as possible.
You can serve smoked eggplant puree warm with grilled meat or chicken. When it’s cold it can be served with a bit of olive oil topping and spices.
