Turkish oven baked rice pudding is a dessert similar to custard and rice pudding. It’s quite light so if you want something sweet but not to feel very guilty, this recipe is just for you to try.


  • 1 lt milk
  • 1 cup sugar
  • Half cup of rice
  • 3 tbsp of wheat starch
  • 1 package  vanilla
  • 2 cups of water
  • Half a glass of milk (to mix with the starch)

How to make Turkish oven baked rice pudding

For oven baked rice pudding first of all boil the rice. 

After boiling, wash the rice well and then boil it again with 2 cups of water until fully cooked. There will a little bit of water remaining inside the pot.

Add other ingredients and cook the rice pudding. You should stir it occasionally so that it will not stick to the pot.

Add milk and vanilla to the boiled rice and let it simmer. When it starts to boil, add sugar and 3 tablespoons of wheat starch mixed with half a glass of milk beforehand. 

Boil it for another 10-15 minutes and turn off the heat.

Divide rice pudding in mini oven casseroles. In Turkey we use terracotta casseroles for oven baked rice pudding. Then put the pudding in the oven but inside a tray.

You should fill your tray with cold water and place the rice pudding cups on your baking tray. The water level should be up to the half of the casseroles.

Place the tray on the top shelf of your oven. Bake them at 180 degrees until the top is golden brown. 

You can serve with crushed nuts or ice cream.
