  • 4 eggs (1 per person)
  • 3 medium tomatoes ( finely diced)
  • 3 long green peppers ( finely chopped)
  • If preferred 2 medium onions (finely chopped)
  • Half cup of olive oil
  • Salt, pepper, paprika, dry mint etc.

Turkish Menemen Recipe

  1. Beat the eggs in a large bowl.
  2. Add pepper, salt, paprika and the seasonings you prefer.
  3. In a large pan heat olive oil a bit and then add onions, peppers and tomatoes respectively.
  4. Wait until the tomatoes lose its juice.
  5. Add eggs while stirring.
  6. Then stir occasionally until the eggs are ready.
  7. You may sprinkle fresh parsley if you prefer.
