- Half chicken breast
- 2 cups milk
- 1 chopped carrot
- 4-5 sliced button mushrooms
- 50-60 gr butter
- 2 tablespoon flour
- 1 tablespoon salt
- 1 tea spoon salt for chicken
- Optional seasoning: 1 bunch fresh dill or parsley
Turkish Creamy Mushroom Chicken Soup recipe:
First of all you should boil the chicken breast with chopped carrots and 1 tea spoon of salt until they both are well cooked. When they are soft and tender pour the chicken stock in another bowl. Cool down the chicken breast for a while.
When the chicken breast is ready, cut it into small pieces.
To sauté the mushroom, put butter and the sliced mushrooms in a pan on medium heat. Mushrooms will be ready in 10 minutes but you may need to stir them once in a while.
In a large boiling pot, add 2 tablespoon flour and 2 tablespoon cooking oil and stir them as quick as possible until the color turns to brown. When it gets a bit light brown, add milk, salt and then chicken stock and keep on stirring. The mixture must be smooth and creamy.
When the soup mixture is ready, add chicken breast pieces and cooked mushrooms. Cook the soup for about 10 mins. You should stir the soup occasionally.
You may sprinkle some fresh dill or parsley if you prefer.
